To create more flavour, use the juices from the chicken as a dipping sauce. You can prepre these a day or two in advance if kept refridgerated.
Serves 4 - 1 1/2 pounds ( 24 ounces) chicken breast boned and skinned.
- 1 large ( 2.5 cups) red garnet yam,peeled and sliced.
- 2 cups onions sliced.
- 1 1/2 cups fennel bulbs sliced
- 8 ounced of mushrooms sliced.
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Slice chicken into 1/4 inch pieces, set aside. Cut aluminum foil into 12 -14 inch squares. In the centre of each square, layer a 1/4 inch of each of the ingredients. Start with the onions,then yams,chicken, mushrooms and ending with fennel. Season with salt, pepper, and a drizzle of olive oil.Fold up sides of foil to create a sealed package. Cook topside down over a medium flame for ten minutes.Turn over and cook for another 20 minutes. Remove and let rest for five minutes beforeopening. Eat these meals right out of the foil packages.
